Pazientini Biscuits

I Pazientini are round biscuits that they prepare with only egg whites and almond flour. They are characterized by being light and fragrant and are generally eaten to accompany a hot cup of tea or ice cream. They are so called because they require a long working process.
The historical origins of this biscuit are attributed to the knight Lorenzo Urna of Viagrande thanks to a recipe handed down since 1885.
