Frascatula with wild fennel is a dish of the ancient peasant tradition of Enna. It is a polenta, made from corn flour, sometimes mixed with durum wheat flour prepared with wild fennel or, in general, with other wild herbs that can be found in the countryside such as wild chicory or borage. Wild herbs lend a strong, slightly bitter flavor to the dish. Today there are versions in which the addition of lard and pancetta is foreseen. It is a hot dish, to be enjoyed in winter.
