Manna is a natural sweetener, once called dew honey, which is obtained by solidifying the sap of southern ash, of the Fraxinus Angustifolia species. Manna is the drop of the ash tree: once harvesting was widespread throughout Italy, today it is mainly done in the Madonie, Sicily.
The a Manna delle Madonie is a Slow Food presidium. In the kitchen it is used to sweeten, flavor or even help leavening, it is often consumed as a digestive and in the past its consumption was mainly linked to its properties: it is, in fact, an ancient natural remedy to calm the colic of newborns. br> Today Manna delle Madonie is widely used in pastry and recently it has also been used in the natural cosmetics sector.
