PDO oil Mount Etna is produced on the Etna volcano, in an area between 100 and 1000 m above sea level. The traditional terraced accommodation and dry lava stone walls mark the landscape in an unmistakable way. The breezy climate and volcanic soil give the Etna oil unique and unrepeatable characteristics. Recent research has also highlighted significant differences in the composition of fatty acids in the Monte Etna oil compared to oils of different origins. According to the myth, the first Italian region to receive the sacred tree from Greece was precisely Sicily thanks to Aristeo, son of Apollo, who introduced its cultivation and taught local populations how to obtain oil from olives. The introduction of the olive tree in the eastern area of Sicily took place around the second millennium BC, by the Phoenicians and the Greeks. In this area, the presence of the Etna volcano, with its eruptive manifestations, has fueled the myth of this crop: the Cyclops Polyphemus, personification of Etna with his eye injected with fire, is blinded by Ulysses with an olive trunk.
