Elena pastries a typical dessert from the city of Favara. These are small single-portion sponge cakes filled with ricotta cream and garnished with chopped almonds.
According to tradition, they were invented by the confectioners Francesco Butticè and Vincenzo Albergamo in homage to the queen of Italy Elena of Savoy, wife of King Vittorio Emanuele III. It is said that, tasting an Elena pasta during her visit to the Agrigento area, the queen greatly appreciated both the flavor and the dedication.
