The Red Garlic of Nubia is characterized by the purple red color of the tunics of its bulbils. It is mainly cultivated in dry, dark and clayey soils surrounded by salt flats, within the Saline di Trapani and Paceco Nature Reserve. There are also crops in the municipalities of Trapani, Erice, Buseto Palizzolo, Valderice and Marsala. It is generally found braided into traditional braids of about one hundred heads each. Nubia garlic is the protagonist of many typical recipes, first of all the pesto alla trapanese.
