The "capuliato" in traditional Sicilian cuisine is a condiment based on chopped dried tomatoes. It is a very popular dish in the Ragusa area. In the term "capuliato" in Sicilian dialect it means "chopped", and declined in the feminine "capuliata" indicates the dish of pasta seasoned with this sauce.
It is an ancient dish born from the need to preserve tomatoes even in winter period: when the methods of preserving tomato sauce and the greenhouse cultivation of the latter were not yet practiced, these were dried and processed in the warm months and stored to then season pasta and bread during the year.
