 Sicilian gateau

Rice gateau is a rich Sicilian first course, particularly typical of the Sicilian hinterland. It is a flan or rice timbale seasoned with meat sauce. To this are added, in layers, other ingredients, which can vary depending on the area, such as hard-boiled eggs, peas, fried aubergines, tomato extract, tuma and pine nuts. The assembled Gateau is then baked in the oven in a pan where it will become compact and can be served.
