"Impanata" of Gela

Impanata of Gela is a baked product, similar to stuffed focaccia, typical of the Gela area. Characteristic of the breadcrumbs of Gela is a well leavened dough that is very soft even after cooking. The traditional filling involves the use of vegetables and first salt cheese, and in some cases of cod. The Breaded di Gela derives from the most ancient "Spanish Empanadas", mentioned for the first time in a recipe book dating back to the sixteenth century. In fact, it is believed to be one of the dishes imported by the Spaniards during their domination in Sicily.
