Iris is a typical sweet of Sicilian gastronomy, of Palermitan origin, included in the list of traditional agri-food products. It is a fried pastry of brioche dough stuffed with ricotta cream and chocolate drops with an external egg and breadcrumb coating. There are several versions of this dessert, based on the filling used, which can also be cream, chocolate or pistachio. There is also a baked version and a savory version with ragù stuffing, which can be baked in the oven, the Ravazzata, or fried, the Rizzuola.
