The Ustica lentil is the smallest lentil in Italy. They are dark brown in color with delicate greenish hues, and are grown on the lavic and fertile soils of Ustica in a completely manual way. They are sown in January and harvested in the first half of June. The cultivation techniques are done with respect for the environment and nature, in fact neither fertilizers nor herbicides of any kind are used: weeds are removed with a hoe. Poor food par excellence, Ustica lentils are a fundamental ingredient of local cuisine. The two classic recipes are the soup, enriched with local vegetables and scented with basil or wild fennel, and pasta and lentils, prepared with broken spaghetti.
