"Maccu" of fava beans

The "Maccu" of broad beans is a typical dish of the Sicilian culinary tradition, very popular in central Sicily, which consists of a creamy and genuine dried broad bean soup that can be scented with fennel or enriched with vegetables. The term "maccu", "dent", derives from the preparation procedure of this dish: with a ladle the beans are crushed, until they become cream. It is possible to taste the maccu di fave with croutons or, as the Sicilian tradition dictates, with pasta. Alternatively, you can enjoy the cold dish: the soup takes on a solid consistency and is cut into slices.
