Ncucciateddu is a type of fresh pasta that derives from the art of knitting pasta by hand, it is a very ancient recipe, which was part of the traditional Sicilian peasant cuisine, in particular of the Hyblean area. It is fresh pasta in the shape of grattoni, made with durum wheat flour, eggs, water and salt. In Modica, this type of pasta is known with the name of Pastratedda.
