Valle del Belice PDO oil it is an oil with a moderate flavor that well recalls the character of Marsilio - strong and cunning king of Zaragoza and leader of the Saracens of Spain who, with a trap set for Charlemagne, manages to defeat the paladins. This oil is the noble fruit of the pressing of Nocellara del Belice, a precious monocultivar from the Belice Valley area. The oil obtained from the pressing of these olives generally has a color ranging from yellow to intense green and a very low acidity. On the nose, the extra virgin olive oil shows a medium intensity olive fruitiness accompanied by notes of almond, green tomato, cut grass, extra virgin artichoke oil and sometimes aromatic herbs. The taste is bitter, slightly spicy and with a hint of sweet.
