Vicari's Passavolante is a dessert made with almonds, sugar and eggs with a light and crumbly consistency.
According to tradition, this dessert was created by the monks of the convent of San Francesco on the occasion of the wedding of the baron's daughter of the town. It is said that the dessert, given its goodness, was so popular that it passed from hand to hand so quickly that it seemed to fly. Hence the name "Passvolante".
