Sicilian almond pastries are almond pastries, one of the symbols of the island's pastry. They are widespread in different shapes and textures throughout Sicily: in Messina they are small and white, in Catania in the shape of an S, in Bronte there is the fantastic variant with pistachio, in the Nebrodi and Etna area that with hazelnuts. All Sicilian almond pastries can be left in their simple perfection or decorated with candied almonds, cherries and orange peel or even other types of dried fruit, such as pine nuts. The differences, however, are only external, because the inside is always and only made of ground almonds, granulated sugar and egg whites.
