Sicilian pecorino DOP is produced throughout Sicily with sheep's milk of various breeds. The types are identified according to the maturation are Tuma, Primo Sale, Secondo Sale and Stagionato. It is one of the oldest Sicilian cheeses, the food source of the people. The Sicilian pecorino is characterized by a hard, greasy rind, due to the capping with olive oil, and has the furrows caused by rushes. The color is white or straw yellow, tending to brown with aging. The paste is hard, compact, varying in color from white to pale straw. Pecorino is usually served with fresh bread and olives, which enhance its strong taste.
