Polenta of "cicerchia", a grain legume that has always been known in the Mediterranean basin, is a typical dish of the city of Aidone. It is traditionally called "frasquatul" and was born as a poor dish of the peasant tradition. Today the cicerchia has become a valuable food, and even the dishes at the base of which there is the cicerchia are highly sought after.
