Quarume

Quarume, also known as Caldume, is a typical dish of Palermo street food. This dish is made by soaking the stomachs and small intestines of veal in a broth made with carrots, tomatoes, celery and potatoes.
It is a dish that is generally eaten in winter due to the presence of hot broth.
The term "Caldume" derives from the Greek term "cholàdes" which means guts, while the term "quarume" derives from the Sicilian verb "quariari" which means "to warm".
Originally the quartz was used to wean the children, since the guts of the calf of which the dish is composed contain important nutritional principles.
