Bitter ravioli from Pantelleria

Ravioli amari are a typical dish of the culinary tradition of Pantelleria. The term amaro does not indicate that ravioli are bitter, but is used to distinguish them from sweet ravioli. These are thin-paste ravioli with Tumma, a typical local cheese, and fresh mint inside. The bitter ravioli are seasoned either with tomato sauce or with butter and sage.
