Scaccia Ragusana is a typical Sicilian street food, a sort of focaccia stuffed with tomato and cheese. There are two types: the "stuffed", which resemble trousers, and the "rolled", which require greater dexterity given the thinness required in the dough. Like every traditional recipe, each family has its own version, but the classic filling includes tomato and Ragusano DOP cheese.
