"Sfincia di San Giuseppe" is a dessert of the Sicilian tradition, in particular from Palermo, and is prepared on the occasion of the feast of San Giuseppe. The Sfincie di San Giuseppe are tasty and soft pancakes covered with a delicate ricotta cream and chocolate drops, chopped pistachios, cherries and candied orange peel The name "sfincia" derives from the Latin and Arabic and means "sponge" and recalls the very soft and airy consistency of these sweets. To obtain this consistency they are subjected to a long and sweet frying, in this way the dough swells by doubling its initial volume, becoming soft and honeycomb inside.
