The stocco alla messinese is an extraordinary and ancient Sicilian recipe. It is a succulent second course of fish based on stockfish, or salted cod preserved for drying. The stocco alla messinese is a fish stew in which the stocco is slowly stewed with herbs, potatoes, tomato and many other ingredients that make it a unique dish of its kind. The traditional recipe includes potatoes, tomato, onion, celery, olives and the inevitable Sicilian touch of raisins, pine nuts and capers.
