Vastedda cu Sammucu, where Sammucu stands for Elderflower is a typical product of Troina. It is a sort of foccaccia made up of two layers, one of which has a fragrant crust, which is rigorously cooked in a wood-burning oven. The peculiarity of this focaccia is the fact that the bread dough is flavored with elderberry flowers, very common in the area, which give it a unique flavor and aroma.
Its recipe seems to have been made by the Basilian monks of the convent of San Michele Arcangelo. Today it is tradition to rely on the Patron Saint San Silvestro before placing the dough in the oven reciting the following words: "San Suvviestu beni e priestu".
Today the Vastedda cu Sammucu is a Slow Food Presidium.
